Spaghetti Squash Tater Tots

Ingredients

  • 1 cup of cooked spaghetti squash

  • 1/2 cup of panko breadcrumbs

  • 1/4 cup of grated parmesan cheese

  • 1 beaten egg

  • 1 tablespoon of chopped chives

  • 1 teaspoon of garlic powder

  • 1 teaspoon of onion powder

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of pepper

  • ketchup for serving

Directions

  1. Preheat your oven to 400 degrees F and line a sheet pan with parchment paper

  2. Squeeze as much moisture as possible from the spaghetti squash. Add to food processor and pulse until coarsely chopped

  3. Transfer spaghetti squash to a bowl and add remaining ingredients. Mix to combine

  4. Scoop mixture onto the prepared baking sheet using 1/2 tablespoon measure Shape into a small tot . You should have 18 tater tots.

  5. Bake for 10 minutes, then flip over and bake for 2 minutes until golden.
