Spaghetti Squash Tater Tots
Ingredients
1 cup of cooked spaghetti squash
1/2 cup of panko breadcrumbs
1/4 cup of grated parmesan cheese
1 beaten egg
1 tablespoon of chopped chives
1 teaspoon of garlic powder
1 teaspoon of onion powder
1/2 teaspoon of salt
1/4 teaspoon of pepper
ketchup for serving
Directions
Preheat your oven to 400 degrees F and line a sheet pan with parchment paper
Squeeze as much moisture as possible from the spaghetti squash. Add to food processor and pulse until coarsely chopped
Transfer spaghetti squash to a bowl and add remaining ingredients. Mix to combine
Scoop mixture onto the prepared baking sheet using 1/2 tablespoon measure Shape into a small tot . You should have 18 tater tots.
Bake for 10 minutes, then flip over and bake for 2 minutes until golden.
