Balsamic Watermelon Salad

Ingredients

  • 2 lbs of seedless watermelon cut into planks
  • 1 medium red onion, thinly sliced
  • 3 Tbls extra-virgin olive oil
  • ½ cup balsamic vinegar (GOOD balsamic vinegar)
  • ¼ mint leaves, chiffonade

Instructions

  1. Combine olive oil and balsamic vinegar.
  2. Gently toss watermelon, red onion, mint and oil mixture together.
  3. Serve immediately.
