Grilled Watermelon

Ingredients

  • vegetable oil

  • 3 tbsp. granulated sugar

  • 1 1/2 tsp. salt

  • zest of one lime

  • 1/4 large watermelon cut into 1 inch thick wedges

  • fresh cilantro and limes wedges for serving

Directions

  1. Heat a gas or charcoal grill to high heat (450 to 500 degrees) and oil the grill with vegetable oil

  2. In a small bowl, stir together the sugar, salt, and lime zest.

  3. Lay the watermelon on a sheet tray. Reserve 1 tsp of the mixture; set aside. Sprinkle half of the remaining mixture all over the watermelon wedges. Flip and sprinkle the rest of the mixture on the other side on the watermelon wedges. Place on a cooling rack for 15 minutes. Then using paper towels press firmly on wedges to remove excess moisture.

  4. Place the wedges on the grill over direct heat for 2-3 minutes on each side. Remove the wedges from the grill and place them on a serving tray. Sprinkle with reserved mixture and cilantro. And finally serve!
